Honestly, book 1 (new version from Mongoose) and 2 could make one good movie, even more if you add the background information from the first Legends book at the beginning.
As for the second movie, I say the ending of book 3 + books 4 and 5. However, a few things will need to be cut. Opening the movie with the confrontation between LW, Vonotar and the Akraa'Neonor, just to make the link between the first movie and this one. Then, fastforward to LW coming back in Toran with his prisonner (how he made his way back from Ikaya to the Cardonal? Who cares! You don't always see James Bond travelling from England to the place where the bad guy hides). Just as Vonotar is sent to the Daziarn, LW is asked to visit the King about the Ruanon incidents. The King explains what happens, LW travels to the remote province with his troops and we skip the mines part of the book directly to the siege of Ruanon. A nice big battle scene, then Oren Vanalund explains what really happens, LW travels to Maaken, fight Barraka and free the damsel. All this could take place in the first hour of the movie.
Second hour of the movie is shortly after the fight at Maaken, the Vassagonian emissary arrives and ask for LW to come with him to Barrakesh. There, LW discovers that it was a trap and escapes. A good 15-minutes chase in the streets of the city would summarize well the first part of book 5. When LW is finally captured, I think the rest of the movie could go on just as it is in the second part of the book.
There's a lot of things that need to be ignored from the books if you want to make a good movie. It's an action movie that we want, so we need action scenes. Some elements from the gamebooks work well in the gamebook but not in a movie. It's a different language. We all loved (well most of us) the LotR movie trilogy even if it skipped the whole Tom Bombadil part and the one about the Shire at the end of The Return of the King. Like it or not, if a LW movie was to be made, a lot of things would be different than from the books.
