I know that both of those location (Talestria and the Danarg) are in book 8. My question is: if you finish book 8, are you guaranteed to have visited both of those areas? (Such that I just need to see if they finished book 8)
Or do I need to find a specific section of book 8 that qualifies LW as having visited one place or the other?

I'd say yes, because Talestria is the country where Book 8 takes place. And the Temple of Ohrido (where you get the Lorestone) is situated in Danarg. Thus (successfully) finishing Book 8 means you were at Section 350, that means you've been to Danarg (Temple of Ohrido) and Talestria (e.g. in Section 1 you start in Garthen - the capital of Talestria; then you travel through the country all the way to Danarg).

That's what I thought. Thanks for the confirmation. There's a couple of different things in book 10: "Have you been to Talestria" and "Have you been to the Danarg". I wanted to make sure that I wasn't missing something.
