I generaly start in Book one with at least Healing, Weaponskill, Hunting and Sixth Sense. The Final slot I leave open for "mood".
Overall, my favorite Disc. group must be Hunting/ -mastery/ Grand Huntmastery. Too useful in too many situations. Esp. in early books when you don't need to carry Meals, as it frees up valuable Backpack space.

As far as usefulness is concerned, I would have to agree with others who have suggested Hunting/Huntmastery, although Pathsmanship comes a close second. However, just for the feel of things, I prefer Mindblast/Psi-surge.
My "message to myself" solutions document contains the following advice so that I can remember which disciplines are best in each book:
Kai: I strongly suggest that Sixth Sense is one of the disciplines chosen to start in the first book. Other than that, there are no requirements, although Healing is generally helpful. Most powerful creatures have Mindshield (so Mindblast has only limited use) but the randomness of Weaponskill makes it even less appealing. Tracking actually reduces your choices and you can get enough meals not to need Hunting. My personal starting lineup would be Sixth Sense, Healing, Mindblast, Hunting, Camouflage. I would then add Animal Kinship at the end of Book 1, followed by Mindshield or Mind Over Matter, then Tracking, and finally the other one of Mindshield and Mind Over Matter, leaving Weaponskill alone.
Magnakai: Unlike in the first series, there is constant pressure on choosing the right disciplines in the Magnakai books. Book 6 has strong suggestions that Curing should be taken and Huntmastery and Pathsmanship have useful bonuses throughout the books. Huntmastery in particular is extremely useful, but not essential for any single book. Completing the Lorecircle of the Spirit gives advantages from Book 9 onwards, but I think there are more important considerations, so my starting line-up remains as given above. To complete the Lorecircle earlier, replace one of the three with Psi-Screen and possibly another with Weaponmastery if you need the CS bonus. I would then add Divination, Weaponmastery, Nexus, Psi-Surge, Psi-Screen and finally Invisibility, in that order, leaving Animal Control. If completing the Lorecircle of the Spirit early, choose Psi-Surge instead of Weaponmastery in Book 8, Invisibility in Book 10 and Weaponmastery in Book 11 if you have not chosen it earlier. Then complete the disciplines you left out of your original choice.
GM: There are many enemies who are immune to Mindblast and Psi-Surge so Kai-Surge is very useful, right from the start. For starting skills, I would recommend Assimilance and Grand Huntmastery to help with critical random rolls in book 13. Finally, Grand Pathsmanship, Grand Nexus, Kai-Screen or Kai Alchemy all give extra survivability in the first book, but I would choose Nexus as this allows an extra random roll to survive at the end of book 13 and also protects from Endurance loss which would not otherwise be subject to Healing. The other skills have limited appeal and Archmasters with Curing already have the Deliverance power anyway. Kai-alchemy, Kai-screen and Animal Mastery are all useful in book 14, but Kai-alchemy and Grand Pathsmanship are both important in book 15, whilst Animal Mastery helps in book 16 and Kai-screen is almost essential in book 17. Therefore, I would add Kai-alchemy, Grand Pathsmanship, Animal Mastery and Kai-screen, in that order. I have not yet completed book 17, so have no advice for books beyond that.
