Is anyone aware of the influence of mysticisms such as Qabalah, Gnosticism, Neo-Platonic ideas or Alchemy on the works of Joe Dever?

Not in any detail, besides that they've all influenced all role playing games. You've left out Daoism and Hindi.

Alchemy is a large part of the Grey Star series.

There is a kind of magic called "Alchemy", but that's just about putting various substances together to create some effect. Sometimes purely chemical (like a strong acid) and sometimes "magical" (like invulnerability), but that's not what the question refers to.
With the reservation that I know little of Qabalah (and not an awful lot about the others either, but at least I have a vague clue), I don't see any traces of influence from mystical traditions on Magnamund. The metaphysics are in general very shallow. It's not like an RPG like Kult...
There is some--or quite a lot of--imagery borrowed from Germanic and Celtic mythology, and a symbol or two from christianity and other religious traditions, but no coherence.

Mysticism seems to play a part in some of the books, but it isn't enough for a thesis, like Thomas was saying. I would say that the place it comes into play most is when concerning the Isle of Lorn and the Shianti.
The grey star books, essentially.
