You could do worse than download the Lone Wolf Software PDF file which contains full instructions taken from scans of the cassette inlays for Flight from the Dark and Fire on the Water 48K Spectrum games! Oh, and if you manage to get past the Helghast attack in FotW, please tell me how you did it!! ;D

I don't remember the Helghast as being particular difficult. Remember to use your shiny new spear if that isn't automatic. I seem to recall that you needed a fairly good result in your training and during the combats in the book, and training with a spear earlier in the books also helps.
In that fight I'd expect mindshield to be of use and mindblast to be more or less useless, so remember to use these as apropriate.
However,

The problem I had with the Helghast ambush is that I couldn't get past it. I could spear the Helghast, but another kept spawning to replace it. No matter how many of them I speared, another one kept appearing straight away. I gave up in the end.

Heh! Stab-a-Helghast just doesn't have the same ring to it.
I should clarify: When I say re-appear, I mean another Helghast walked onto the screen from the right and began attacking me. No matter how many of them I slaughtered, another one just walked onscreen immediately afterwards. What is supposed to happen here?

If this is the Helghast attack on the highway while you are with Rhygar, then I think you could flee from that combat. Otherwise I think the book mentions six Helghast and I would expect no less in the game, and perhaps the programmer made the number infinite. So where in the game are you?

Yeah, it's the attack on the highway with Rhygar that I got to. That was about a year ago, and I gave up because there seemed to be an infinite number of them.

Right. It may bery well be so... There is no "Win" section for that combat, so you are supposed to flee.
Try to find out what key is used for "evade combat" and use it.
