When buying Potions in Lone Wolf Book 5 even though the text specifically says theirs only 1 bottle of each type of Potion, I've always assumed that every bottle is big enough to hold as many dose's as you either want Lone Wolf to buy or Lone Wolf can afford to buy or you think Lone Wolf can afford to buy and that assumption is based on the fact that because Book 5 doesn't say that you can't do this that you can, but after close to 27 years(got Book 5 sometime in Very Early March 1,995) I've been thinking, Is what I have always done the right thing in Book 5?

No, unless explicitly stated in the text (like in book 13), potions only ever have 1 dose per bottle. Combining doses of additional potions into the same container is cheating.
Additionally, the amount of potions you can purchase in book 5 depends on if you're buying potions on section 27 (where you get to the shop having Limbdeath) or 154 (escaped the sewers without Limbdeath).
For the latter case, the text (at least the PA edition) explicitly states you can buy as many potions as you want, only limited by your gold on hand and available carry space. It's less clear with section 27, but the context indicates there's only 3 bottles (1 dose of each) available to buy. "She reaches behind the counter and brings forward three glass bottles". The "per dose" in the following section means nothing in this case.

I guess I've been doing it wrong for close to 27 years, but I'd always assumed that when buying bottle of Potion if each bottle could only hold 1 dose that the text would specifically state that and if the text didn't specifically state that each bottle could only hold 1 dose then each bottle could hold as many Dose's as you could either afford or were willing to buy

It's like those monsters whose CS varies depending on whether or not Lone Wolf has such-and-such weapon at hand. Much like the CS differences, I'm guessing that it's just a gameplay design choice by Dever. But it could also fit in with the story - you're afflicted with a horrible disease and time is of the essence as to not lose your arm (or your life), and casually browsing her wares is not on your mind. Further, later you acquire the best (at least through the MK series) restorative potion (or is it just the dry leaves?) anyway. I can see where that is a meaningful gameplay choice for series veterans. You can pick up lots of smaller potions (plus the Jeweled Mace later) or a few of them plus a BIG one.
