Hello…. I’m lucky to have never read any Lone Wolf books despite growing up in the 80’s and being a big Fighting Fantasy reader, I have the whole world of Joe Dever ahead of me! But…. Having started LW1, meeting with the Raven toting Vordak (and getting a beating) then the burrowcrawler (more wounds) I now find myself leaping in to defend the Prince against the Gourgaz with only 3 endurance points! I have not got the discipline of healing, have not been given the chance to eat nor have I found and curing potions etc. How do you heal? Have I just made wrong choices? It seems I’m going to be dead very quickly in this outing? It would seem that the Kai discipline of healing (I don’t currently have it) is essential to get through the game. I just want to make sure I’m playing this right, I’d like to play the whole epic properly rather than just saying I win every battle!

There are different paths (through the first book especially) which can heavily change the amount of Endurance Points you lose along the way.
But Healing is a very useful discipline - especially if you don't have high Combat Skill and/or the disciplines that can boost it.
There are Healing Potions & similar you can find or buy at certain points during adventures, and when you have a good rest overnight (or at specific story points) you'll often get some points back.
But these are all infrequent & can't be relied upon.
There are also some combat balance issues with the series caused by a powerful weapon you get in Book 2 - by Book 3 Healing isn't as vital as in the first 2 books & it actually becomes a bit overpowered if you keep the Healing unlimited.
The new versions of Book 1 have been published with an optional rule to cap the Healing to a maximum of 10 points regained per adventure - but this still leaves Healing as a pretty essential discipline pick for books 1 & 2.
However if you're coming from Fighting Fantasy books, restarting multiple times find the safest path through the book (so Healing can be skipped) might be the kind of experience you are looking for?
If not, I'd recommend Healing.
There are other discipline & path combinations that can get you through the first 2 books, but it starts takes away some of the freedom of choice.

There is a lot of things to take in consideration: both your starting CS and EP scores, starting equipment, choice of Disciplines, paths you choose... plus you need some luck to roll high numbers in a consistent manner during battles. But let me tell you that it is possible to get through book 1 by going through a path devoid of fights, but you need luck (because of two places where you use the Random Number Table) and a certain Discipline (that I won't name here because spoiler! ).
